This stunning Aperol & Amaretto Sour is made with gin and Angostura bitters!

We’ve given the classic Amaretto Sour recipe a makeover with this fabulous twist! Mixing in Aperol, gin and Angostura Aromatic Bitters (which we sent to Clubbers in their May 2023 Gin of the Month box) to the traditional mix of amaretto and lemon juice, this version is brimming with gorgeous flavours.

The classic Amaretto Sour recipe calls for you to shake an amaretto (most commonly Disaronno) with lemon juice and egg white. It’s a nutty, citrus cocktail that’s hugely popular.

This new take on the classic adds a mouthwateringly bittersweet palate of Aperol to the almond flavours of amaretto. The gin then provides a rich base of juniper and the Angostura adds a warming spice that is delectably moreish and complex.

As with any Sour, this cocktail can be made with or without egg whites. For the recipe below we have gone without them for a clean, smooth, crisp finish. But you can add an egg white to the recipe if you wanted to get that luxurious foam top.

If you did want to include an egg white, then simply shake one egg white with the other ingredients first without ice (a “dry shake”) and then with ice to get that foamy layer on top of your cocktail.

Aperol & Amaretto Sour
with gin and Angostura bitters

30ml gin
20ml Aperol
10ml amaretto
10ml Simple Syrup
20ml lemon juice
2 dashes of Angostura bitters

Add all the ingredients to a cocktail shaker with ice and shake well. Fine strain into your serving glass.
