This beautiful, wonderfully sour pink gin cocktail recipe has a truly special rosé cider at its centre: Galipette Cidre Rosé, which Craft Gin Club sent to members in their February 2023 Gin of the Month box.
The semi-dry flavour profile of Galipette Cidre Rosé has wonderful touches of acidity and a delicious savouriness that comes from a variety of apples, including the red-fleshed Pomme à Chair Rouge (which lends the cider its rosé colour), which all work so well with the complex, rich profile of London dry gin in this cocktail recipe.
The lemon juice then adds its delightful sour tang and the sweet simple syrup rounds all of the flavours out wonderfully.
Garnish with lemon and rose petals to add to the fragrance of the cider and you are in for a real treat.

Apple Rosé Sour
35ml gin
20ml lemon juice
10ml Simple Syrup
Galipette Cidre Rosé, to top up*
Lemon slice and rose petals, to garnish
* You can also make this cocktail with other Galipette Cidre drinks, particularly ones with semi-dry profiles like Galipette Cidre Brut.
Add the gin, lemon juice and simple syrup to a cocktail shaker and shake with lots of ice. Strain into a rocks glass. Top up with cider. Garnish, serve and enjoy.
