We know you love a pretty cocktail as much as we do here at Craft Gin Club, so feast your eyes on this beautiful spring gin cocktail. Popping with a bright pastel purple hue and gorgeous edible flowers to boot, we’re struggling to think of a better-looking spring sip!
And a lot of its beauty is down to clever colour-changing gin (known as butterfly pea flower gin) - if you haven’t heard of it, here’s everything you need to know about colour-changing gin.
But what does a purple cocktail that looks so good taste like? This pastel-coloured gin fizz has distinctive floral notes thanks to the violet liqueur and a smooth and velvety mouthfeel from the cream and egg white. And if you don’t eat eggs or are vegan simply swap it for aquafaba (find out more here) and vegan cream.

Violet Gin Fizz
45ml butterfly pea flower gin
10ml crème de violette
25ml lemon juice
15ml simple syrup
10ml cream
1 egg white
Soda water, to top up
Edible flowers and a lemon twist, to garnish
Combine your first six ingredients in a cocktail shaker without ice and shake well. Add ice and shake a second time. Strain into a highball glass and top up with soda. Garnish and enjoy.
