Adore Aperol? Well, don’t miss this gorgeous rhubarb twist on the popular tipple. When we made this at our Craft Gin Club HQ, we couldn’t get enough! Naturally, we had to experiment with adding gin to it, and we were head over heels for the results.
A spritz during the summer is an absolute essential, and if you’d like a tart twist on the Aperol Spritz, this rhubarb recipe could be the one for you. It’s the perfect drink to share with friends, it’s so tangy, fruity, and moreish.
The iconic sweet-tart rhubarb tones of the gin complement the delectably bitter-sweet citrus notes of the Aperol wonderfully.

Rhubarb Aperol Spritz
30ml rhubarb gin
20ml Aperol
10ml simple syrup
Prosecco, to top up
A squeeze of lemon juice
Orange slice, to garnish
Add all of the ingredients aside from the prosecco into your cocktail shaker and shake. Double strain into a large wine glass with cubed ice and top with prosecco.
