If you are looking for a beautiful summer and spring cocktail that’s completely delicious and incredibly easy to make at home then we recommend giving this divine gin cocktail recipe a go.
And, with a name like “Sunflower”, we think it makes the perfect Mother’s Day cocktail too - it’s definitely the kind of flower we’d love to receive!
Now, we have suggested a sophisticated extra option here: it’s an absinthe ‘wash’, people! But don’t let the absinthe put you off, the Green Fairy isn’t too scary here. We are only using this high-proof liqueur to “rinse” the inside of the glass. This allows the cocktail to take on those luscious aniseed tones of the absinthe without forcing you to deal with the massive hit of alcohol that usually comes with it. Of course, if you’d rather leave the absinthe element out, this is still a beautiful cocktail, and super simple to make.
What’s more, to make it even more quaffable, this lovely spring cocktail recipe gives you the option to add a rim of sugar to the glass - the sweetness of the sugar is a traditional accompaniment to absinthe and, in this recipe, it adds to the complexity of each sip.
The other ingredients in this cocktail aren’t quite so heady but just as delicious. The elderflower syrup adds sweet, fragrant floral tones that hum with spring and summer joy and the fresh lemon juice adds a much-needed citrus tang and a brightness that elevates the whole experience. The Cointreau liqueur then introduces layers of rich, orange warmth.

Inspired by the sunflower fields of Rhosilli, which grow not far from The Gower Gin Company distillery, this gin was originally made to celebrate Mother’s Day using sunflower petals and honey.
It has mouthwatering apricot notes that work fantastically well with the liquorice-like wash of the absinthe, the floral allure of the elderflower syrup and zesty lemon juice. You simply must give it a try!
The best Sunflower cocktail recipe:
25 ml GŴYR Sunflower Gin
25ml Cointreau
25ml Craft Gin Club Elderflower Syrup
25ml lemon juice
Dash of Absinthe to rinse the glass (optional)
Lemon peel or sugar rim, to garnish
First, if using, add the absinthe to your glass and swirl it so the liquid coats the inside surface. Pour out any excess.
To rim the glass, place a tablespoon of sugar in a saucer and sit the glass upside-down in the sugar so that the edge of the coupe is evenly coated.
Add the GWYR Sunflower Gin, Cointreau, elderflower syrup and lemon juice to a shaker with ice and shake well. (You could stir vigorously in a spearate glass with ice if you don’t own a shaker, too.) Strain into the Coupe or Martini glass. Garnish with lemon peel, if using. Serve and enjoy!
