Charred Lime Gimlet

There are many ways to ‘smoke’ a cocktail, but this is an unusual technique. Simply charring your citrus adds a new flavour profile to an otherwise simple and classic cocktail.

Charred Lime Gimlet

Ingredients

50ml Rock Rose Citrus Coastal Edition Gin
25ml charred lime cordial
Charred rosemary sprig, to garnish (optional
Lime peel, to garnish

Method

To make your charred lime cordial: Cut two limes in half and char the fleshy side in a nonstick pan under a grill for five minutes, or until dark brown. Remove the limes from the grill and juice them, ensuring you have 50ml of lime juice. Add your lime juice to 50ml water and 50g sugar and stir well. Add the flesh of the charred limes and leave to infuse for at least 30 minutes. Strain and store in the refrigerator until ready to use.

When you want to make your cocktail: Fill a mixing glass with ice and add your gin and lime cordial. Stir until chilled and slightly diluted, then strain into a cocktail coupe or Martini glass. Garnish and serve.
