This delicious green cocktail is an incredible twist on the classic Mojito recipe that swaps rum for gin. It has been developed by the wonderful team at Pennington’s Spirits & Liqueurs to celebrate one the Lake District’s most famous sweet treats, Kendal Mint Cake, a peppermint-flavoured tablet notably used by explorers like Sir Edmond Hilary and Sir Ernest Shackleton to help give them an energy boost.

Kendal Mint Mojito
The not-so-secret ingredient to this cocktail recipe is Pennington’s Kendal Mint Cake Liqueur. It’s bursting with stunning mint flavours and has a unique and mouth-watering hint of chocolate that’s wonderfully moreish. It really takes this Cumbrian twist on a Cuban classic to the next level.
Ingredients
50ml Pennington’s Lakeland Moon Snowfell Gin
25ml Kendal Mint Cake Liqueur
Three or four fresh mint leaves, plus more to garnish
10ml Simple Syrup
Juice of a whole lime
Soda water
Methods
Add your mint leaves and sugar syrup to a glass and muddle. Add ice, then add your gin, liqueur, Simple Syrup and lime juice. Stir gently and top with soda water. Garnish to serve.
