If you have ever spent time in the Netherlands, chances are you’ve nibbled on a stroopwafel! And if you haven’t, then let us enlighten you: literally meaning “syrup waffle”, this Dutch delicacy consists of two thin layers of crispy, sweet and buttery waffle dough sandwiched around a layer of gooey caramel. Yum!
Here at Craft Gin Club, we are so enamoured of this tasty sweet treat that we decided to share our love of them with our members this month - those opening their Gin of the Month box for March 2020 will find (nestling alongside their craft gin, tonic, mixers and other delicious snacks) a little parcel of Daelmans Caramel Stroopwafels.
The good folks at Daelmans told us all about their favourite way to eat the snack - to sit it atop your mug of hot beverage so that it can slowly soften with the rising heat from the liquid below. The result is a gooey centred, lightly spiced disc of waffle heaven! (Check out their Instagram page for mouthwatering recipe ideas using #warmituponyourcup!)
Well, we couldn’t miss out on that level of deliciousness, could we? Inspired by the idea of “warm it up on your cup”, we’ve invented a warm, creamy caramel cocktail recipe that’s easy to make and the absolutely perfect drink for sipping along with a Daelmans Caramel Stroopwafel!

Spiced Caramel Eggnog
Before you start making this cocktail you will first need to make the Tom & Jerry batter at its centre. The batter is named ‘Tom & Jerry’ after a cocktail of the same name which was invented in America in the early 19th Century. It’s basically eggnog heated up to make it warm and rich, with a soft, velvety texture.
Here’s what you’ll need:
1 egg yolk
1 egg white
50g sugar
1tsp cognac or spiced rum
Pinch of spice mix (1/2 tsp vanilla powder, 1/2 tsp cinnamon, 1/2 tsp all spice mixed together)
To make the ‘batter’, use a small glass bowl and whip the egg white until foamy. In a separate bowl, beat the egg yolk with the sugar, cognac or spiced rum and your spice mix until the mixture is creamy, pale and liquid. Fold the egg yolk mixture into the egg white and give a final stir to combine.
Note: This mixture makes around 3 cocktails and can be left in the fridge for up to 7 days.
Now you are ready to make your Spiced Caramel Eggnog cocktail!
Ingredients:
30ml gin
30ml cognac or spiced rum
1 tbsp Tom & Jerry batter
hot milk to top up
grated nutmeg and/or caramel sauce to garnish
Method:
Rinse a latte glass with hot water to warm it up. Add the first 3 ingredients and give a quick stir. Top with hot milk while stirring with a spoon. Garnish with nutmeg and/or caramel sauce.
All that is then left to do is sit your Daelmans Caramel Stroopwafel on top to warm through in that lovely boozy steam. Delicious!
