Fruity, creamy and sweet, this tasty tipple is absolutely divine as an alternative to pudding, especially on hot summer days when you fancy something a little lighter at the end of your meal.
The recipe was inspired by the traditional Fruit Fool - an English dessert dating back to the 15th century, where sweetened, puréed fruit is folded into whipped cream. We’ve used peaches here, because we love them - especially as they burst plumply into season in the summer months and are at their juiciest, ripest best - but this recipe is very adaptable, so feel free to experiment with your other favourite fruits.
We recommend apricots, strawberries or raspberries, swapping out the peach liqueur for elderflower liqueur or Chambord respectively!
Peaches & Cream Martini
Large slice of peach or 2 tsp peach purée
30ml gin
30ml single cream
30ml peach liqueur
Peach slices, to garnish
Begin by adding your large peach slice to a cocktail shaker and muddling it, or alternatively by adding your peach purée. Add your gin, cream and liqueur to the shaker with ice, and shake well. Strain into a martini or coupe glass and garnish.
