This bright, fruity cocktail is inspired by the flavours of the fabulous retro dessert, Cherries Jubilee - a happy medley of fresh cherries, cherry brandy, vanilla and ice cream!
Here, we’ve balanced those rich, sweet flavours with some tart, freshly squeezed lemon juice, smooth gin and topped up with soda - what could be more delicious on a hot summer’s day?
Cherries Jubilee
20ml gin
30ml cherry brandy liqueur
20ml lemon juice
10ml sugar syrup*
Soda water, to top up
Lemon slice & maraschino cherry, to garnish
Fill a highball glass with ice. Add your gin, cherry brandy liqueur, lemon juice and simple (sugar) syrup, then stir. Top up with soda water, garnish and serve.
*Sugar syrup (also known as simple syrup) can be bought in shops, but it’s much easier and cheaper to make your own! Simmer 100ml water with 100g caster sugar over a low heat, for 5-10 minutes, stirring occasionally, until the sugar has dissolved and you have a thin syrup. Store in the fridge.
