We promise you, there is absolutely no better accompaniment to a night on the sofa watching your favourite TV than this home-made popcorn drenched in a warming, buttery, creamy, sweet, gin-infused caramel sauce. In fact, it’s probably a good enough reason to cancel your going-out plans!
POPCORN & GIN-INFUSED CARAMEL SAUCE
Look, absolutely nobody here is going to judge if you want to buy a bag of ready-made popcorn to use for the sauce! That said, we do think there is simply nothing better than hot, freshly-popped corn straight from your pan (plus, it’s super fun to hear all the kernels popping and about 10 times cheaper to buy the corn pre-popped, just saying). Here’s how you can pop your own corn at home. But on to the main event: the caramel sauce!
INGREDIENTS:
100g caster sugar
45g salted butter
60ml double cream
15ml gin
METHOD:
In a saucepan, heat the sugar gently in a pan over a medium heat, stirring constantly with a wooden spoon until it turns thick and treacly.
Add the butter and whisk until smooth, then add the double cream, stirring constantly.
Boil for about a minute, then remove from the heat and stir in your gin.
Pour the gin caramel sauce over the popcorn, making sure to stir it in so it covers all the kernels evenly, then leave to cool a little before eating. (Do be careful, the caramel will be extremely hot when it first comes off the stove, due to the high sugar content.)
