How is Junimperium Special Edition Tallinn Dry Gin made?
Junimperium Special Edition Tallinn Dry Gin is made by the Junimperium Distillery (winner of IWSC International Gin Producer Trophy 2022!), founded by fashion designer-turned-restauranteur Tarvo Jaansoo and his friends Raigo Sepp, Harri Ambur, Roland Metsa and Priit Põldmäe.
Together with Junimperium Master Distillery, Aare Ormus, they have created Junimperium gin using Juniper berries from Estonia, Macedonia, Italy and Serbia, along with a range of other carefully selected London dry botanicals.
The full list of Junimperium Special Edition Tallinn Dry Gin botanicals can be found here: Estonian juniper, Tuscan juniper, Macedonian juniper, Serbian juniper, coriander seed, angelica root, Nordic quince, bitter green orange peel, grains of paradise, lime and lemongrass.
After botanicals have been selected, Junimperium gin is then distilled in seven steps:
Step one: The distillers at Junimperium start with a neutral base spirit made from rye, which has been cultivated in Estonia for millennia.
Step two: The four different junipers are crushed and left to macerate for 48 hours.
Step three: All the other botanicals in the blend are distilled individually.
Step four: The single-botanical distillates are blended together using a precise recipe, so each batch is perfectly balanced.
Step five: The gin is diluted to bottling strength using reverse osmosis water that has had all its impurities removed.
Step six: To achieve a crystal-clear appearance, the distillers cool the gin to -1°C, so particles of juniper oil freeze and can be filtered out, leaving behind the pure flavour.
Step seven: The gin is poured into Junimperium’s signature apothecary-style bottle and labelled with a design created by a design agency, run by Tarvo’s son.

Junimperium Special Edition Tallinn Dry Gin is distilled at the Junimperium Distillery in the Telliskivi neighbourhood of Tallinn, the capital city of Estonia.
What does Junimperium Special Edition Tallinn Dry Gin taste like?
Junimperium Special Edition Tallinn Dry Gin is a juniper-forward gin with an exceptionally smooth mouthfeel.
From the moment you nose it, the complexity of the four different varieties of juniper comes through. On the palate, the piney core of juniper is enhanced by citrus notes from the Nordic quince, lemongrass and lime, while the grains of paradise add a slightly peppery, earthy touch to the finish.

Junimperium Cherry Edition Gin review:
Junimperium Gin Cherry is made by macerating sour cherries for three months before distilling them and adding botanicals like pink peppercorn, meadowsweet, orange blossom, almond and vanilla.
The final liquid is slightly honeyed while remaining fresh, aromatic and natural. Delicious!
