Spring to Life: Top Tips for a Country Picnic (Portable Cocktail included)

Bluebells are blossoming and daffodils are popping up everywhere. It can only mean one thing: the last of the winter weather has gone and spring has finally sprung! Our friends at Nim’s (whose fruit crisps made a star appearance in our April ‘19 Gin of the Month box) gave us some tips on where and how to enjoy an afternoon out amongst the flowers – with a gin cocktail or two, of course!

Where to find…bluebells?
April is a big month for bluebell lovers, because that’s when these gorgeous blooms lend their periwinkle magic to forest floors across the UK.

Head to ancient woodlands to see them in their full glory; Grizedale Forest in the Lake District, Burroughs Wood near Leicester and Arlington Farm in East Sussex are all famous for their bluebell carpets.

Where to find…daffodils?
If daffodils are your flower of choice, you can head to Basildon Park in Berkshire, where 400 acres of historic parkland abound with yellow blossoms. Meanwhile, Acorn Bank in Cumbria is a cornucopia of daffodil varieties for the true connoisseur.

The National Trust has lots of suggestions for bluebell woods around the UK and the best places to admire daffodils for you to explore.

Well, we would say this, but…
Portable, healthy and delicious, the Nim’s Fruit Crisps in the April Gin of the Month box really are a great option for a spring walk. Just stash them in your pocket and go!

A not-so-humble sandwich suggestion:
For a delicious cheese sandwich with a twist: crush or chop your Nim’s Apple and Pear crisps finely and stir them into softened butter with a sprinkle of cinnamon. Spread on sourdough bread and sandwich cheddar in-between the slices. Wrap in tinfoil and your (almost) gourmet sandwich is ready to go.

For added energy and healthy brownie points, why not pop a simple salad into a jam jar, ready to eat? We love a combination of beetroot, goats cheese, sweet potato and bulgar wheat (plus a little balsamic salad dressing) - just avoid anything with too much lettuce, as it will go soggy!

PORTABLE SPRING PICNIC COCKTAIL

Elderflower & Apple Sling
Combine 125ml of gin, 100ml of elderflower cordial and 500ml of cloudy apple juice in a glass bottle with a stopper, seal and shake. Take along cups and a thermos full of ice, plus a packet of Nim’s Apple Crisps. When you reach your picnic destination, parcel out ice and your cocktail mixture, then pop in a Nim’s Apple Crisp as a delicious, fuss-free garnish. (Makes approx. four servings).
