That pile of bananas you bought last week - telling yourself you were only going to snack healthily - that are now going brown and spotty on the counter? It’s time to put them to work in this astoundingly good spiced up banana bread, laced through with a buttery hit of toffee gin. Banana bread is an incredibly forgiving bake so if you’ve binged through all the seasons of Great British Bake Off and are looking for somewhere to pick up your wooden spoon and apron, this is your guy!

Toffee Gin Banana Bread
100g butter, softened
175g light brown sugar
4 ripe bananas, mashed
2 eggs
2 tbsp toffee gin
1 tsp vanilla
1 tsp cinamon
1/2 tsp nutmeg
1/8 tsp cloves
1 tsp baking soda
1 tsp salt
200g plain flour
150g toffee pieces, optional
Preheat the oven to 180°c and line a large loaf tin. Beat together the butter and sugar until light and fluffy, then stir in the bananas until well mixed.
Fold in the eggs one at a time, then mix in the toffee gin, vanilla and spices. Measure the flour, baking soda and salt into a separate bowl, then sift into the batter.
Mix in the toffee pieces until just combined, then pour into the loaf tin. Bake for around an hour, until the top is golden and springy to the touch, and a skewer comes out clean. Leave to cool on a rack, then slice and serve.
