Asian Gin Fizz
Ingredients
60ml gin (Perfume Trees would be our first choice but any London Dry Gin can work)
25ml coconut cream
15ml lemon juice
15ml lime juice
25ml Thai basil syrup
1 egg white
1 drop Holy Lama Lemongrass Spice Drops
Soda water, to top up
Method
First you will need to make your Thai basil syrup, which is very easy to do with this recipe: Add three sprigs of Thai basil to 100ml simmering water for two minutes. Strain and add the Thai Basil cold water (this stops the cooking and helps maintain the colour). Blitz the sprigs and the now cold water in which you simmered them in your blender. Strain and add 100g of caster sugar. Mix well until the sugar is dissolved and use within a month.
Add all of your ingredients apart from the soda water to your shaker. Shake once without ice to emulsify the egg white and then again with ice. Strain into a highball glass with two ice cubes, top up with soda water and serve.
Lemongrass Martini
Ingredients
40ml gin (Perfume Trees is ideal but another fragrant London Dry Gin will be just as delicious)
35ml white vermouth
1 drop Holy Lama Lemongrass Spice Drops
5ml rosemary syrup*
Lemon twist, to garnish
Method
You will need to make your rosemary syrup first, here’s how: Combine 1 drop of Holy Lama Rosemary Spice Drops with 50ml of simple syrup (100g of sugar dissolved in 100ml of water). Use within a month.
Stir in a pint glass or shaker full of ice and then strain into a chilled Martini glass. Garnish and serve.
