An incredibly simple drink to make at home that needs no fancy equipment or ingredients, this pretty pink gin cocktail is a slightly tart, slightly sweet and totally refreshing tipple to serve on a summer’s evening. We love how stunning the little jewels of pomegranate seeds look bobbing about in your glass - as well as the little bursts of flavour you get from them!
You could use pomegranate seeds from a fresh fruit; many supermarkets and deli shops now sell packets of just the seeds all year round, too.
We recommend using freshly squeezed grapefruit juice if you can, for the freshest flavour; that said, shop-bought is totally fine - but you might want to leave out the simple syrup if you do use shop-bought, as it tends to have sugar added to it and can be already quite sweet. As ever, try your drink without the syrup first and then add or adjust the quantities to suit your own tastes!
This is also a fantastic party drink you can make in big jugs when you’ve got friends coming over - simply multiply all of the quantities below by the number of guests you’re expecting (and how thirsty they tend to be….). Enjoy!
Pink Grapefruit & Pomegranate Gin Cocktail
50ml gin
120ml grapefruit juice
1-2 tsps pomegranate seeds
10ml simple syrup (optional)*
Little squeeze of lemon or lime (optional)
Fill your rocks or copa glass with plenty of ice. Add your gin, juice and simple syrup, then stir briskly for 10 seconds. Taste, then add a squeeze of lemon or lime if you would like it a little sharper. Add a sprinkling of pomegranate seeds to garnish and serve.
You could also top up with a little soda for a lighter, sparkling option of this tasty tipple!
*You can buy simple syrup online or in shops; alternatively, make your own by gently heating 100g caster sugar with 100ml water and stirring for a few minutes until the sugar dissolves. Allow to cool before using. Left-over syrup will keep in the fridge for several weeks.
