Lemon Meringue or Raspberry & White Chocolate, we can't decide which cocktail to try first!

If there is one edible item that we love as much as gin, it has to be meringue. Meringue in any shape or form will always draw our attention, but meringue coated in chocolate, like the gorgeous snack bars from Flower & White, they really get us drooling - which is why we just had to send Flower & White’s delicious Raspberry Crumble and Lemon Meringue bars to our members in their April 2021 Gin of the Month box.

Both of those beautiful snacks go so well with the stunning, show-stopping cocktails below, all of which have been created by our Master Mixologist, Maria, to pair perfectly with those chocolate-coated meringue delights.

Your next night in just got a whole lot more scrumptious!


Limoncello Meringue Martini

Serves 2

Ingredients

70ml gin
50ml limoncello
50ml lemon juice
1 large egg white
65g caster sugar
1/2 tsp white wine vinegar

Method

For the meringue: Whisk the egg whites with the white wine vinegar until soft peaks form then start slowly trickling in the sugar while continuing to whisk. When all the sugar is incorporated and the meringue is glossy and smooth it’s ready.

Add the gin, limoncello and lemon juice in a shaker with ice and shake well. Strain into a coupette and top with fresh meringue. Char the top of the meringue with a blowtorch and serve.


Lemon G&T

Ingredients

25ml gin
25ml limoncello
25ml lemon juice
150ml tonic water
Lemon peel and lime wheel, to garnish
Rosemary, to garnish (optional)

Method

Add all the ingredients in a gin Copa with ice and give a quick stir to combine. Garnish with a lemon peel and lime wheel.


Raspberry & White Chocolate

Ingredients

40ml gin
20ml raspberry liqueur
10ml Crème de Cacao Blanc
50ml single cream
1 tbsp mascarpone
25ml milk
5ml vanilla syrup
Crushed digestive and white chocolate curls, to garnish

Method

Use an electric whisk to beat the single cream, milk, mascarpone and vanilla syrup together until they have a creamy and velvety texture, and coat the back of a spoon.

In a mixing glass, combine gin, raspberry liqueur and crème de cacao blanc with ice and stir until chilled. Strain into a coupette and then very slowly pour the cream mixture on top, with the help of the back of a spoon. Garnish with some crumbled biscuits or white chocolate curls - nothing too heavy or it will fall down in the glass, breaking the layer effect.

Try crumbling a little of Flower & White’s Raspberry Crumble meringue bar on top for an extra decadent touch!

Ingredients

40ml gin
10ml Crème de Cacao Blanc
15ml lime juice
150ml tonic Water
Lime and raspberries, to garnish
Mint, to garnish (optional)

Method

Add all the ingredients in a Copa with ice and give a quick stir to combine. Garnish with lime and fresh raspberries.
