Who doesn’t love a bit of chocolate gin-dulgence at Christmas time? These truffles are easy to make and taste amazing.
Gin and Tonic Truffles
Method:
Carefully melt the dark chocolate in a bowl over a pan of simmering water–ensure the bottom of the bowl does not touch the water! Remove from the heat, then stir in the double cream. Mix until smooth. Now add the gin, tonic, lime juice and zest. Mix until the combination is smooth and has thickened slightly. Transfer to an airtight container and place in the fridge overnight. Remove from fridge, wash hands and roll teaspoon sizes of the mixture into balls. Place them onto baking paper and return to the fridge for up to 2 hours. Sieve the cocoa powder into a bowl and individually roll each ball before placing in a gift box…or your mouth!
Ingredients:
400g dark chocolate
200ml double cream
50ml gin
40ml tonic water
Juice of 1 lime juice and zest
Cocoa powder, to dust
