This clementine and thyme gin and tonic will brighten up the gloomiest winter day!

One of our favourite - but often underrated - winter fruits to pair with gin is the humble clementine. Bright, zingy and sweetly citrus, clementine segments will enhance the flavour of many gins (especially those with citrus notes) - not to mention the splash of cheery colour they add to our glass on a gloomy January day!

Of course, if you’re making your own homemade clementine gin this winter, some fresh clementine slices will provide the perfect garnish to show off your lovely libations.

To garnish your G&T, herbs and spices including bay leaf, ginger, rosemary or cinnamon all work well alongside clementine, but one of our favourites is the addition of fresh thyme, for a taste of summer in your winter tipple.

Clementine and Thyme Gin & Tonic

50ml gin (or to taste)
180ml tonic
1 fresh clementine
A few sprigs of fresh thyme

Fill your chilled gin glass with ice and add your gin and tonic. Carefully peel a sliver of clementine skin off the fruit, taking care to remove any of the bitter white pith. Put to one side to use as an extra garnish at the end. Remove the rest of the peel and cut the clementine in half. Squeeze the juice of half the clementine into your drink and stir well. Now slice the remaining half into segments and prick with a fork to release the juice. Pop the segments into your gin and sprinkle with the fresh thyme. Twist the clementine peel and add as a final garnish (optional).
