This divine cocktail was one created for us here at Craft Gin Club HQ by our mixologist-in-residence, Maria, one Friday afternoon as the reward for a long, hard week at work… and we can confirm that this gorgeously refreshing cocktail - combining peach liqueur, apple juice, prosecco and gin, infused with just a hint of delicate chamomile - is THE perfect antidote to a tough week!
It’s genuinely really easy to make at home, too, and worth the extra time spent infusing the gin (although you could leave out that part if you prefer). We’ve called it a party punch because it’s clearly a guaranteed crowd-pleaser, but it’s quick and simple enough to whip up for one come the weekend, too. So give it a try this weekend - and let your working week’s woes drift away!
Pink Gin, Peach & Prosecco Punch
Makes one cocktail
30ml Chamomile infused Gin*
10ml Peach Liqueur
10ml Lime Cordial
80ml Apple Juice
Top Prosecco
Garnish: Lime and Flowers, Peach Slices (Optional)
First, make infuse the gin: simply add one sachet of chamomile tea (or 3g chamomile) in 200ml gin for 20-30 min (taste after 20 - the longer you leave it, the stronger the flavour will be). Strain and it’s ready to use.
Now simply add a shot of your infused gin to your ice-filled gin glass, and add the peach liqueur, lime cordial and apple juice; stir. Top up with prosecco. Garnish with a slice of lemon or lime and some peach slices or pretty flowers, then serve!
