A pomegranate and rosemary gin & tonic brings festive cheer to any occasion!

With its bright, jewel-like seeds shining like miniature baubles and piney sprigs that could be pulled from your Christmas tree, this pomegranate and rosemary gin and tonic has a truly festive feel to it!

Bursting with flavour and colour, it’s sure to brighten up even the dullest and darkest of winter days.

Pomegranate and Rosemary Gin & Tonic

40ml gin
10ml fresh lemon or lime juice
Handful of pomegranate seeds
A few sprigs of fresh rosemary
Pomegranate juice (optional)
Tonic water, to top up*

100ml water
100ml caster sugar

Make a rosemary simple syrup by simmering 100ml water, 100ml caster sugar and a sprig of rosemary over a low heat, gently stirring, for about five minutes, or until the sugar has dissolved and reduced into a syrup infused with the aroma of the herbs. Take off the heat, remove the rosemary (don’t touch the syrup!) and leave to cool.

Add plenty of ice to your glass. Pour over the gin, lemon juice, about 15ml of the rosemary simple syrup (the rest will keep in the fridge), pomegranate juice if using, and tonic water. Stir well. Add a sprinkle of fresh pomegranate seeds and a sprig of rosemary and serve.

*You could also use soda water.

Tip: Give a gently bash to your pomegranate with a wooden spoon or rolling pin before you open it - this will help release the seeds!
