Because of their punchy flavour, gooseberries can often get a bad press, but handled correctly they can be an absolute delight! Tart, green and juicy we cannot get enough of them here at Craft Gin Club HQ, they are little green marbles, bursting with flavour! Especially when paired with wonderfully floral elderflower and a good glug of gin, like in this fantastic Gooseberry, Elderflower & Gin Fool recipe.
Luxuriously creamy, delectably sharp and scrumptiously sweet, this recipe is a lip-smacking retro classic that’s full of the flavours of the British countryside and perfect for any occasion!
Gooseberry, Elderflower & Gin Fool
Ingredients
500g gooseberries, topped and tailed
50g caster sugar
100ml elderflower cordial
50ml gin (we like Slingsbury Gooseberry Gin or Wessex Gooseberry & Elderflower Gin for this recipe, but any good London dry can work)
Natural green food colour (optional)
300ml double cream
300ml full-fat Greek yoghurt
Method
Pop the berries, sugar and elderflower cordial into a pan, bring to the boil and simmer until the berries are soft and have burst. Let the berry mix cool, then puree in a blender and pass through a sieve to remove any pips.
Add the gin. At this point, you can also add a little green food colour to intensify the very pale green of the berries if you wish. Chill the gooseberry puree.
Before serving, whip the cream until soft peaks form. Do not over whip, as the acidity of the puree will thicken the cream further. Fold in the yoghurt, then fold in the puree, reserving a little to drizzle on top of the fools. Spoon the mix into glasses and drizzle any remaining puree on top.
Chill until serving. Enjoy!
