Elderflower Gin Fizz

80ml Warner Edwards Harrington Elderflower Gin
60ml apple juice
60ml St Germain
2 tbsp lime juice, freshly squeezed
Soda water
Cucumber sliced into spears, to garnish

Method:

In a tall glass filled with ice, combine gin, St Germain, apple juice and lime juice. Stir well, and top with soda water and cucumber to serve.

Blackberry Gin Smash

60ml gin
1 Tbsp blackberry jam
1 tsp sugar
5 lemon balm leaves
1 tsp honey
Soda water

Method:

In a cocktail shaker, muddle the lemon balm leaves, jam and sugar until the leaves bruise and the sugar combines well. Add ice, gin and honey to the shaker and shake vigorously until well-chilled. Pour the mixture into a glass and top with soda water. Garnish with additional lemon balm leaves to serve.

Lavender Martini

30ml crème de violette
60ml gin
7.5ml ginger liqueur
7ml St. Germain
1 dash lavender bitters

Method:

In a cocktail shaker filled with ice, combine all ingredients. Shake vigorously for 30 seconds and pour into a chilled Martini glass. If desired, garnish with lavender sprigs to serve.

Rosemary Gin Spritzer

60ml gin
30ml lemon juice, freshly squeezed
30ml rosemary sugar syrup*
Soda water

*For the rosemary sugar syrup:
4 rosemary sprigs, roughly chopped
120g sugar
120ml water

Method:

First, prepare your sugar syrup by combining rosemary sprigs, water and sugar in a small saucepan over medium heat. Bring to a boil and after approximately 10 minutes take off the heat. Allow mixture to rest for at least 30 minutes, then strain into an airtight container and let cool completely.

To assemble the cocktail, fill a glass with ice. Pour gin, lemon juice and syrup into the glass, and stir to combine. Top with soda water and garnish with a sprig of rosemary if desired.
