Baking cookies while drinking gin cocktails is the perfect way to spend a night in!

There’s no better way to spend the perfect night in than with cookies and cocktails!

All it takes is a great choc chip cookie recipe that’s quick and easy to make and a fabulous cocktail to enjoy as you do it. We have just the cookie recipe you need and the perfect cocktails to pair it with.

Our recipe takes the traditional chocolate chip cookie, which is mouth-watering enough on its own, to new realms of deliciousness with the Luscious Orange dark chocolate bar from Willie’s Cacao, which some of our members can find in their February 2021 Gin of the Month box. A fabulous chocolate bar, it’s made with amazing single estate cacao beans from Baracoa in Cuba and only 100% natural ingredients.

Biscuity, chocolatey and bursting with warm orange aromas, they are the perfect match for our Orange Negroni recipe - which you can find here - or the marvellous Orange Martinez recipe which you can find below.

Together, they make for one gin-credible night in!



Orange Chocolate Chip Cookies

Orange Chocolate Cookies recipe

Ingredients

150g butter, softened
160g light brown sugar
200g Luscious Orange dark chocolate from Willie’s Cacao, broken into small shards
200g plain flour
2 tsp vanilla extract (or 1 tsp of vanilla paste)
1/2 tsp nutmeg
1/2 tsp bicarbonate of soda
A pinch of salt
1 egg

Method

1) Preheat your oven to 190c.

2) Combine the butter and the sugar in a bowl and beat together until pale and fluffy.

3) Add the egg and the vanilla extract to the butter mixture and mix until incorporated.

4) Sift in the flour, nutmeg and the bicarbonate of soda and mix until a soft dough forms.

5) Mix in the chocolate until the shards are evenly spread through the dough.

6) Leave the dough to chill in the fridge for 30 minutes.

7) With a spoon, scoop even-sized balls of dough and place them on a baking tray lined with baking parchment, giving them space to melt down into their cookie shapes.

8) Bake the cookies for 15 minutes or until golden then remove from the oven and place on a cooling rack while you make your Orange Negroni.

The cookies are best served warm so the chocolate is still gooey as you sip away at your cocktail. Enjoy!

Orange Martinez

Orange Martinez

Ingredients

40ml gin
10ml Maraschino liqueur
20ml sweet vermouth
1 dash of Angostura Orange Bitters
Orange peel, to garnish

Method

Combine all of the ingredients apart from the orange peel in a shaker or mixing glass with lots of ice and stir well. Twist your orange peel and rub it around the rim of the glass. Strain the cocktail into the glass and garnish with the orange peel.
